Engame question can black create a fortress and draw?

I'm trying to understand if this position can be drawn with best play by black. What do you think?

White is a knight up but will have to trade b-pawns to make progress. I think it may be possible for black to set up a fortress on the kingside despite being a pawn down. Black does however have to avoid a knight sac for a pawn along with a rook trade, which would lead to a lost king and pawn endgame.

Also, do you know any reference material that discusses R+N+PPP vs R+PPP endgames?

Cheers.
The position you mentioned above is a clear loss for black. There is no way for black to set up a fortress in the above position. Fortresses commonly have four characteristics:

1. Useful pawn breakthroughs are not possible.
2. If the stronger side has pawns, they are firmly blocked.
3. The stronger side's king cannot penetrate, either because it is cut off or near the edge of the board.
4. Zugzwang positions cannot be forced, because the defender has waiting moves available.

If we run through the list, then we see that item one is false. Item 2 is false. Item 3 is also false. Item 4 is true. However, we need all four of the above items true before we can have any hope of creating a fortress.

In your position white can eventually either force the trade of rooks or win more material or both. It is usually easy to win more material when you are a full piece ahead.

man, if 3 vs 3 with a clear piece up were a draw, then every position in chess would be draw
Just attack black's base of the pawn chain with rook and knight and transpose to a winning pawn ending
