Is the stock fish depth number better if it is negative or positive? When stock fish analyzed one of my games, it showed me negative numbers (for both sides) and for another game it gave me positive numbers. these numbers are the right of the algebraic notation of the moves, what does this mean?

If you mean the evaluation number, then the more negative the evaluation number then the bigger the advantage for black. Similarly, the more positive the the evaluation number then the bigger the advantage for white.
In your above example, "When stock fish analyzed one of my games, it showed me negative numbers (for both sides)" it means that black has an advantage. Likewise, "and for another game it gave me positive numbers." this means that the white side has the advantage.
